Most of us are aware that eggs are a great source of the omega’s but did you know you can also get them from hemp seeds? Hemp seeds are also full of good plant-based protein and they are just one of the superfood ingredients in this powerhouse breakfast. They don’t really have a lot of flavor so you can pretty much sprinkle them on anything. I like to think of it as an easy way to add extra nutrition to smoothies, salads, veggies and of course…oatmeal.
Maca is another ingredient that’s a superfood–known for it’s positive effect on hormone regulation. Bananas, dates and coconut oil provide a ton of health benefits and also help to sweeten it up and add a good texture. Add all this to fiber-rich oatmeal and you have everything you need for the perfect breakfast. Plus, oatmeal is pretty darn simple and quick to make. No need for that pre-packaged stuff… this is a hundred times better for you and made from fresh, whole ingredients.
You can even double this recipe and leave leftovers in the fridge for the next day. Just remember to wait to add the hemp seeds and banana until you are ready to eat.
- 1/3 cup whole oats
- 1 1/3 cup water
- 1 tsp coconut oil
- 1 tsp maca powder
- 2 medjool dates chopped
- 1/2 tsp vanilla extract
- Dash of cinnamon
- 1 tbsp hemp seeds
- 1 small banana sliced
- 1 tsp shredded coconut optional
- Honey or Stevia optional
- Add first 7 ingredients (through cinnamon) to a pot on medium heat. Heat for 10 minutes or until it thickens. Add honey or stevia if you like it extra sweet.
- Transfer to bowl and top with hemp seeds, coconut and banana.
