Green Limelight

A great twist on green juice…this juice has a nice tartness from the lime that balances perfectly with the sweetness of the apples.  This juice is really high in electrolytes from the lime and celery so it’s perfect after a workout, the morning after you indulged a bit too much, or just to start off your day.  Plus, lime and mint are just really yummy.  This might be one of my favorite green juices yet!

Green Limelight

  • 2 apples, cores removed
  • 1 lime, peeled
  • 2-3 sprigs of mint
  • handful of beet greens (or any other green - spinach, kale, romaine)
  • 3 celery stalks

Peel the lime, or squeeze the lime juice into your glass separately and remove the seeds (sometimes the peels are tough to get off). You can also use a citrus juicer, which is what I ended up doing.

Cut all of the veggies so they fit in your juicer. Garnish with a mint sprig and lime if you wanna get fancy with it...
