Creamy Superfood Stuffed Mushrooms

Let’s be honest, food isn’t just about eating…food is an experience. It’s an experience that brings us together, helps us connect and nourishes our souls. As the weather cools off, it’s a great time for warm home-cooked meals with those you love….whether that’s your family, or in my case, your beautiful and inspiring group of girlfriends. It also means that the holidays are right around the corner so you may find yourself needing some tasty appetizer recipes.

Luckily for me, my friends also like to eat healthy and they don’t mind when I try out new things on them…I mean, usually they turn out great (and if they don’t, hopefully they can still taste the love!)  Fortunately, last night my stuffed mushroom experiment was a success.

Your typical stuffed mushrooms are filled with breading and cheese…which none of us really need more of in our lives, so I wanted to find a way to still make them taste decadent but fill them with healthy stuff…and so my superfood stuffed mushrooms were born.

The sweet potatoes in the filling are really rich and the quinoa adds a nice texture, in addition to protein, fiber and a plethora of vitamins and minerals.  I also snuck some turmeric in there (which is a strong anti-inflammatory) and some nutritional yeast which is super high in B vitamins.  To make them creamy I added almonds…be sure to get slivered ones that don’t have the skin on them (the skin creates a bit of a weird texture). These definitely have a unique flavor unlike other stuffed mushrooms, but are still rich and tasty and you don’t have to feel guilty about eating them….especially since many party appetizers are anything but healthy.

TIME-SAVING TIP: Whenever I make quinoa, potatoes or anything else that saves well in the fridge, I make a huge thing of it and then it’s quick and easy to use the same ingredients in meals later on in the week.  I added some of the leftover quinoa to my salad for lunch today…score!
