I’ve been mostly plant-based for almost 20 years and my health is thriving more going into my 40’s than it was in my 20’s.
However, when I first got started on my journey – outside of smoothies – my plant based creations were often really complicated. And the idea of meal prep? Maybe if I had 3-4 free hours at the beginning of the week – which I never did.
Luckily, I was always creative in the kitchen and loved helping others, so I made it my mission to develop recipes that were easier and simpler, yet just as healthy and delicious. As friends and family started asking me for recipes and health advice, I decided it was time to get a formal education in nutrition and herbs so I could infuse all my recipes with essential nutrients and I understood the science and research behind my passion.
These days…eating healthy comes easy. Being busy doesn’t lead me to eat junk food because I know the tricks and tools to make nutritious meals come together faster than I can decide what kind of Thai food I want to order.
And most importantly…I’ve spent years doing workshops and cooking demos to teach people – just like you – how to go from thinking that eating healthy is hard, boring and time-consuming, to knowing that it’s sexy, delicious and fun.

This workshop is modeled off of a live corporate wellness workshop I did. After the live demo, there was a resounding amount of positive feedback like, “Wow, you made that look so easy” and “I’m so inspired to do this now!” and I knew that more people needed to learn the tips and tricks so meal prep doesn’t seem so daunting.
All recipes included here are plant-based. gluten-free and soy-free. There is one sauce that uses cashews, but there is an alternate bonus recipe included that can be used as a substitution.
Yes! Some of the cooking instructions include oil, but there are options given if you choose not to.
